Captain Sprout’s Gazpacho

Is there anything tastier than a fresh home grown tomato?
4 large tomatoes
1 medium cucumber, chopped
1 medium green pepper, chopped
1 stalk celery, chopped
1 small onion, chopped
1 clove garlic, minced
2 cups chicken broth, tomato juice or V8
2 tbsp. lemon juice
1 tbsp. olive oil
1 tsp. sugar
1 tsp. salt
1/2 tsp. ground pepper
dash bottled hot pepper sauce, optional
croutons
Peel tomatoes and coarsely chop. In a large bowl combine chopped tomatoes, cucumber, green pepper, celery, onion and garlic.

Stir in chicken broth (juice or whatever you choose), add lemon juice, olive oil, sugar, salt, and pepper.

Cover, chill thoroughly. Garnish each serving with croutons. Serves 8-10.

Hot pepper sauce is optional. For a smoother soup, contents can be put in a blender or food processor.
This is a great basic gazpacho recipe. I use 3 or 4 cloves of garlic and more pepper.

Vegetarians will be delighted with the result of a juice substitution for the chicken broth.
